Stuffed Sweet Potatoes with Smoky Veggie Sausage, Chard, and Apples 

This hearty all-in-one meal tops a succulent baked sweet potato with chard leaves, onions, and plant-based apple-sage sausage from Field Roast. It's high in flavor, protein, and other nutrients (see details at the bottom of this post). The main version has relatively little fiber, perfect for those migrating to a plant-based diet or for vegetarians or vegans who need to be on a low-fiber diet. See the notes for how to easily make this higher in fiber.  Either way, it's a satisfying meal for omnivores.

Beach Smoothies with Strawberries, Blueberries, Banana, and Chard

We're in that sweet spot just before Memorial Day, just the time to break our your shorts and relax with a fruit smoothie. Ripe fruit makes it sweet. Chard provides a whiff of green, like freshly mown grass in an orchard. No fillers, no added sugar, no cholesterol, low calorie, low fat, all good. Enjoy!

Italian Dandelion Greens

Sweet pecans and raisins complement the delectable bitterness of long Italian dandelion greens, a type of chicory. Farmer Screech of Screech Owl Greenhouses told me last week that this variety is popular in Europe. (I suspect it is Catalogna Special, but I'll ask next time I see him.)  Try this recipe to tame dinosaur kale or other hardy greens you find in your CSA box: curly kale, collards, Swiss chard, or mustard greens.

Everybody’s Happy Bean-and-Green Stew

Looking for something delicious and easy that most people will eat? Try my new Everybody's Happy Bean-and-Green Stew. It's gluten free, vegetarian, vegan, fat-free, and cholesterol-free. The black beans masks the bitterness of the greens, so supertasters like it. Know someone who is cutting back on sodium? Replace the salt with a little orange zest. Cook for someone who is trying to lose weight? Let them fill up on this low-calorie, high-fiber dish to help them resist other temptation.

All the ingredients are so thrifty that even the organic version is wildly affordable. CSA subscribers like it because it uses up the greens that just don't stop coming. Cooks like that it is a crowd-pleaser and that it is a snap to make in a slow cooker. Even fancy guests will like it served it as shown above. I ladled the beans on microwaved organic sweet potatoes, then garished with homemade cashew cream. The fresh spring salad is made from butterhead lettuce, beet greens, spinach, and spring onion. The salad dressing is a sorghum twist on my honey-mustard dressing.

Lucky Rainbow Chard Pesto

Tired of slush and chill? Fed up with greens braised, steamed, and boiled? Find happiness with Lucky Rainbow Chard Pesto. In just ten minutes, you can whirl up a rainbow-flecked green sauce that can go low fat or no fat. Toss it with hot pasta or potatoes or use as a spread on crackers or sandwiches. The flavor is rich but slightly less bitter than Parsley Pesto, making it my new winter favorite. Make your own luck by saving 1550 calories, 415 grams of fat, and about $8.60 with this low-fat, plant-strong recipe too. That's 94 calories, 52 grams of fat, and about $1.08 per serving without compromising flavor! See notes below.
