French Green-Lentil Salad

I nearly kissed the airline attendant who brought me a cold lentil salad on my flight home from Paris. I'd been able to get excellent bread, coffee, and chocolate all week, but few legumes, not even this traditional French dish. It's a chilled salad that tastes like spring: sunshine and earth with a hint of fresh green. It's rapide to make and délicieux nestled on salad greens. 

Dress this hearty, flexible recipe up by mixing in bite-sized sections of sugar-snap peas, radish, or even steamed asparagus. In the picture below, I've topped it with beet sauerkraut from Two Chicks Farm, as I've topped many savory dishes since I bought a jar.  In the summer, try adding chopped tomato or bell pepper.

Collard Rolls with Lentils and Rice

Lentilicious Sunshine Spread

Say bye-bye to boring baloney and busted budgets with this multi-purpose spread that's positively lentil-licious! Sunshine Spread is like a no-fat homemade hummus packed with flavor that takes less time to cook and no food processor to wash. It's so good that the folks who try it gaze up at the sky with delight, so easy that you can make it even on a busy weeknight.

It's shown below on homemade toasted Good Whisk Bread with a simple slaw of grated carrots and purple cabbage. If you're not going going to be breathing on your top client or favorite sweetheart right after, make it even better with thin slices of purple onion.

Jack-Be-Little Pumpkins Stuffed with Spiced Tomato-Lentil Sauce

The vendors at the farmers' market where I loaded up on adorable Jack-be-Little pumpkins were amazed when I told them my plans: decorate from Halloween to Thanksgiving, then eat the nectarine-sized pumpkins. "You can eat these?" they asked. Can and should. They have an earthy, savory goodness appreciated by those who love mushrooms and artichokes. If that's not you or you don't have any tiny pumpkins, use an acorn squash or half a pie pumpkin. See notes below for making the switch.

Such a bargain, too! You'll get six weeks of decoration followed by a fine-dining appetizer or side dish for about $1.50 per person.
