Carrot Spice Cake

Fall spices and a lovely orange color make this easy cake a great weeknight dessert or tea-cake near Halloween and Thanksgiving. Just don't scare anyone by letting them know how healthy this unfrosted cake is, with carrots, ginger, whole grains, and no dairy or eggs. It's a nice break from the holiday excess yet still feels like a treat.

Tomato and Watermelon Spicy Rocket Ice Pops

You have to be a grown-up robot to handle this cool blast of flavor! The inspiration comes from Mark Bittman's recipe for tomato jam, but with less salt and sugar, a yellow watermelon base, and no cooking. Plus watermelon. The result? Out of this world!

Super-Food Smoothies

What does a superhero have for breakfast? Maybe an amazing Super-Food Smoothie. Making a big batch helped tame the crazy amount of produce I bought at the market on Saturday. I grab a jar for breakfast, then go power around the swimming pool like Super Cook!

Just a short workout with the blender lets you pack a lot of nutrition into easy-grab jars. Have one for breakfast, a mid-afternoon break, or dessert.Because it freezes well, it's also an great answer to the question of what do to when you couldn't resist buying two giant cantaloupes (only five dollars!).

The ingredients are pure super fruits and vegetables: blueberries, cantaloupe, kale, and ginger. These nutrient-packed foods help your body stay lean and strong, with a healthy heart, sharp eyes, and a strong memory. Happy World Gingerbread

Bring on the holidays with this fragrant, tender gingerbread. The ingredients come from all over the world but play well together, hence the name Happy World. Gingerbread comes from Armenia and then from France. My version uses the maple syrup from my northern childhood and sorghum from my Southern life now. The spices were first used in India and the Middle East, olive oil comes from the Mediterranean, and bananas were first cultivated in Malaysia.

Spread the joy by sharing snack cake with friends or tucking pieces into a lunch bag. Your body will be happy that it tastes so good yet is made with whole grains, little oil, and has no cholesterol. Perfect for Christmas and Winter Solstice parties.

Happy World Gingerbread is made with white whole wheat flour, sorghum, maple syrup, citrus zest, and olive oil. Egg free, dairy free, cholesterol free and absolutely tender and delicious.

Stir-Fried Pea Shoots with Ginger and Garlic, Super-Wok Style

One of my favorite Triangle-area restaurants is Super-Wok, where I first had stir-fried pea tips with garlic (also called pea shoots). My version, like theirs, is fairly hot and spicy, but you can adjust it to make it your own.

I love finding new vegetables and really love finding out that something I'd been composting was actually a delicacy. Use this recipe to cook fresh greens in about ten minutes. You'll get the fresh pea flavor without having to shell or string the pods. The leaves have the texture of baby spinach and the stems provide a satisfying crunch, even after a quick stir-fry.

Active time: 10 minutes. Total time: 12 minutes. Make four big servings or eight side-dish servings.
