How to Grill Eggplant on a George Foreman Grill

I scored a George Foreman grill at a thrift shop for three bucks a few weeks ago. I love how quickly it grills vegetables, especially eggplant. I eat them hot off the grill as a side dish. These tender grilled eggplant slices would be excellent layered with tomato sauce for eggplant casserole or sandwiches.

The small George Foreman grill is very handy for cooking for one or two. My Taster doesn't like eggplant. I don't want to fire up a big gas grill for just a few slices, but this makes it easy to make some just for me. Yum!

How to Make Light Cashew Cream (with Eggplant!)

I've shared samples of this luxurious yet light cashew cream with several friends and they all rave about it. I'm thrilled to share it with you today. We've eaten it on crackers, spread it on toast, in tomato sandwiches instead of mayo, and even in lasagna instead of ricotta. It's wonderful just by the spoonful too. Amazingly, the spread is mostly steamed eggplant, so it has fewer calories than pure cashew cream. Compared to the ricotta cheese and sour cream that it can replace, it also has fewer calories, less saturated fat, no cholesterol, plus more fiber, potassium, and iron. Make Light Cashew Cream in a Vitamix or other high-speed blender for the creamiest results, but it's good made with a regular blender or food processor too. The eggplant brings another win by being naturally smoother than cashews when blended at a lower speed. At high speeds, it's as smooth as smooth gets.

Slow-Cooker Ratatouille Italiano

My version of this classic rustic French eggplant and pepper stew amps up the flavor with oregano, chipotle, and black olives. Cook it with set-and-forget ease in your slow cooker. This recipe makes a lot, but you can change it up with variations below or just freeze the extra.

Baba Ganoush or Smoky Eggplant Spread

Creamy, smoky eggplant spread is so easy to make that I can't believe I've relied on my Mediterranean deli to keep me supplied all these years! I just roasted eggplants while I was baking sweet potatoes, flipped them a few times, scooped out the insides after the eggplants collapsed, then mashed in the rest of the ingredients with a fork. Get the details in the baba ganoush recipe below.

Here, baba ganoush is spread on toasted Good Bread Machine Bread from Fifty Weeks of Green and served with tomato slices and olives. it made a great savory breakfast, but usually I'd serve this as an appetizer or snack.

Microwave-Steamed Eggplant for Pizza, Sauces, Stir-Fries

Steam eggplant for a fat-free, silky pizza topping or to enrich stir-fries, tomato sauces, and many other dishes.

I started playing with this idea when my friend Laura told me a trick she'd learned from one of our favorite cookbook writers, Madhur Jaffrey: steam the eggplant before stir-frying. Madhur roll-cuts her eggplant then steams it in a wok for 15 to 17 minutes.

With my faster, greener, less authentic recipe, you cut the eggplant into smaller cubes and microwave it for only 5 minutes. You also save calories and money by avoiding the oil needed to fry it, sauté it, or even grill it.
