Cocoa aquafaba meringue cookies with peanut-butter filling

These little cookies melt in your mouth like a peanut-butter cup meringue. This winning recipe started as a failed recipe for chocolate meringues. Cocoa caused the peaked meringues to sink into disks while baking. The disks looked pretty sad on their own, but make perfect tops and bottoms for sandwich cookies. The combination of salty, creamy peanut butter with crisp, airy cocoa meringue makes for a dessert everyone will ask for. Get the recipe below.

We Made It Cocoa Peanut-Butter Truffles

On the last night of our SNAPcut Challenge, I mixed all the peanut butter we had left with judicious amounts of four other ingredients to make these quick, satisfying truffles. The recipe for We Made It Cocoa Peanut-Butter Truffles is supremely easy. These quick treats taste a lot like a homemade version of the famous chocolate peanut-butter cups. They are a lot healthier than Reese's Peanut Butter Cups, with no cholesterol and no artificial ingredients such as soy lecithin, polyglycerol polyricinoleate, and tertiary butylhydroquinone.

Make six large truffles to delight you and your sweetheart or thirty smaller ones to share. I've given you the ingredients for a small or large batch below. As always when you cook from scratch, you can make these truffles as organic as your budget allows. If you use a natural peanut butter that separates, pour off some peanut oil before starting to make them lower in fat and more stable at room temperature.

Hot Italian Cocoa Cookies

These tender cocoa cookies taste like a Ferrari but are as healthy as a Honda. Vroom, cookie, vroom! Hot Italian Cocoa Cookies use olive oil instead of butter and ground flaxseed instead of eggs. Their sexy smoky tingle comes from ground chipotle powder. How good are they? Watch Valonda Calloway's reaction when she tries them on My Carolina Today.

 My Taster says "excellent" and "you can't get any better than this." I say, "Let's try one more to make sure this is real."

Cocoa-Coconut Flip Cake

You'll flip over this super easy, healthy cake that frosts itself. The video below shows that it's a perfect, fast comfort-food dessert for after school or a weeknight supper. My beloved mother-in-law taught me the basics. She used nutritious cocoa powder and no eggs or weird chemicals to make this cake. I added a Cook for Good twist by using white whole wheat flour instead of all-purpose flour and coconut spread instead of butter. It's one of my Taster's favorites.
