Coconut Vegetable Curry

This richly flavored Coconut Vegetable Curry uses curry powder amped up with a few extra spices to get loads of flavor without loads of measuring. It's my favorite way to use the coconut milk left after scooping out the coconut cream for other recipes. This brightly colored curry comes together in just 20 minutes of active time with an extra 10 minutes of simmering. Great for comfort food during the week or dinner with friends.

Curried Beet Greens with Carrots and Cashews

Beet greens and chard take the place of kale and collards all summer in the Cook for Good kitchen. This recipe pairs the heartiness of the beet greens with sweet carrots and spicy curry. I first made it on a night when I craved Indian food but wanted to stay in my cozy home. Now it's a weeknight favorite.

Spring Salad

The best ingredients lead to the simplest, tastiest meals. Day by day, it's easier to answer the "what's for dinner" question with real food as close to its natural state as possible.

This spring salad, for example, relies on ultra-fresh salad mix, sweet carrots, and pungent green onions all grown locally by Kelly Morrison of Color Fields Farm in Hillsborough, NC. (She grows amazing flowers for weddings, events, and daily delights too.) Because she rinses everything three times, I can get by with a single rinse at home. This fresh spring salad is healthy, with lots of vitamins and minerals but only 19 calories. It's wildly affordable too, at just $1.43 per serving using top-quality, local, and organic ingredients.

Kraut-Chi, Fermented Bok Choy and Carrot Slaw

Culture your own probiotics at home with this easy, tangy slaw. Sandor Katz, the king of fermentation, calls it "kraut-chi" because English doesn't have a word for fermented vegetables, unlike German (sauerkraut) and Korean (kim-chi). I eat a spoonful or two of fermented food nearly every day for the zingy taste and to help my gut biota thrive. You don't need yogurt to get probiotics, the good bacteria that may help your GI-system stay balanced and healthy.

Carrot Spice Cake

Fall spices and a lovely orange color make this easy cake a great weeknight dessert or tea-cake near Halloween and Thanksgiving. Just don't scare anyone by letting them know how healthy this unfrosted cake is, with carrots, ginger, whole grains, and no dairy or eggs. It's a nice break from the holiday excess yet still feels like a treat.
