There's often too much zucchini in my life during the summer, and I got really tired of zucchini bread, zucchini casserole, zucchini in salad....so, here's my alternative: Zucchini-Ritos.

Shred zucchini in food processor and squeeze most of the water out of it. I put the shredded zuke in a dish towel, squeeze (gently) and repeat. Saute the zucchini in a little oil at med temp with a lot of chopped garlic and some s&p till moisture is gone and zucchini is tender.

Roll zucchini in a tortilla and add the usual accoutrements: I always add a little cheese, salsa, yogurt or whatever seems appropriate at the time.

VERY tasty and a nice change...
